Oven Roasted Carrot Fries with a Honey Mustard Glaze
This recipe doesn’t take long and it pairs well with an oven roasted chicken. I usually just stick the carrots in the oven right along with a chicken so that everything is done together along with some garlic bread. YUM!
I will explain how to make this as a stand alone recipe, but honestly the temperature of your oven doesn’t really matter, it may require you to cook the carrots a bit longer if the oven temperature is slightly lower. The key is to get a brown caramelized look.
Preheat the oven to 425.
I always try to keep some carrot seeds going in my garden because homegrown carrots will get quite big and don’t take up a lot of real estate in the garden. Growing carrots is really fun for kids too because it’s always a surprise seeing how big they get when you pull one out.
We like to harvest our carrots as needed to make this recipe. It is a great way to improve the microbiome and gut health by only giving the carrots a quick rinse and not peeling them so we get a bit of earth in our food!
If you are using store-bought carrots, go ahead and peel the skin after washing them for safety reasons.
Cut the carrots so they are 3 inches long and no more than 1/2 inch thick.
Mix 2 tbs of honey, 2 tbs spicy mustard, 2 tbs olive oil, 1 tsp garlic powder, 1/2 tsp salt/pepper together in a bowl.

Place the carrots in a 8 x 13 baking dish and drizzle the honey mustard glaze over them.
Use a spatula to coat the carrots and then spread them evenly on the baking dish, leaving some room between.
Bake them on 425 degrees for 15 minutes. Then turn the carrots and bake for another 15 minutes until they are golden.
If you are roasting the carrots as a side dish with something else already in the oven at a lower temperature, try to bake them for an additional 10 minutes, turning them halfway.
Garnish with a bit more salt and some fresh chopped cilantro.

- 2 tbs olive oil
- 2 tbs raw honey
- 2 tbs spicy mustard
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 8 medium carrots
- 1 tbs fresh cilantro
Instructions

Preheat oven to 425

Mix first 6 ingredients together in a bowl

Wash carrots. If you bought them from a store I suggest peeling them. If they are from a garden just give them a light rinse.

Cut carrots so they are 3 inches long and no more than 1/2 inch thick. You want them to be the size of a steak fry

Place cut carrots in a baking dish and drizzle the glaze over them.

Use a spatula to coat the carrots and them spread them out evenly on the baking sheet.

Roast in the oven for 15 minutes. Then turn the carrots and bake for another 15 minutes

Remove and lightly salt again and sprinkle with fresh chopped cilantro as a garnish.
