Oven Roasted Carrot Fries with Honey Mustard Glaze

    1. Preheat oven to 425
    2. Mix first 6 ingredients together in a bowl
    3. Wash carrots. If you bought them from a store I suggest peeling them. If they are from a garden just give them a light rinse.
    4. Cut carrots so they are 3 inches long and no more than 1/2 inch thick. You want them to be the size of a steak fry
    5. Place cut carrots in a baking dish and drizzle the glaze over them.
    6. Use a spatula to coat the carrots and them spread them out evenly on the baking sheet.
    7. Roast in the oven for 15 minutes. Then turn the carrots and bake for another 15 minutes
    8. Remove and lightly salt again and sprinkle with fresh chopped cilantro as a garnish.
