Red White and Blue Popsicle Recipe

Popsicles are a fun, festive, and healthy way to celebrate 4th of July!

Ingredients

  • 1/2 cup frozen blueberries
  • 1/2 cup frozen strawberries
  • 2 cups coconut water

Instructions

  1. Place blueberries and 1/2 cup of coconut water in a high powered blender and blend until smooth. Using a spoon, fill each popsicle mold 1/3 of the way full with the mixture. Place in freezer for 2 hours or until frozen.
  2. Once the blue layer is frozen, pull the mold out and fill each to the 2/3 line with coconut water. Add the popsicle sticks and place back in the freezer for 2 hours or until frozen.
  3. Place strawberries and 1/2 cup of coconut water in the blender and blend until smooth. Pour this layer in the popsicle mold to fill the remainder of the mold and place back in the freezer for another 2 hours or so.
  4. Serve right away or on ice for an hour
